Bell peppers are a favorite of mine to add in salads and soups, or just sliced with a dip or hummus. They add a great, crunchy flavor and have so many healthy benefits. They are low in calories and rich in vitamin A and C. The red variety have the highest amount of C along with beta carotene. Studies have also shown that they can lower bad cholesterol and control diabetes. Vitamin E is present and aids with healthy skin and hair. The antioxidants give them the cancer fighting punch that we get from so many vegetables. B6 is great for the nervous system and renews cells. And finally enzymes in peppers help to protect the eyes from cataracts and macular degeneration.
Like so many other veggies, peppers are fighters for our health and could be put in the category of superfood!
